I was craving bruschetta and shrimp last night so I thought why not mix the two together!  I pulled up my trusty Pinterest and sure enough….A million calorie and carb recipe was right in front of me. 
I decided to “slim” it down and it was the most fantastic dinner EVER!  I took out the bread and put the bruschetta over my tofu noodles that I am absolutely OBSESSED with!  http://www.house-foods.com/tofu/tofu_shirataki.aspx

These are AWESOME for anyone on a diet.  To prepare them, all you have to do is take them out, rinse them off and throw them into a pan.  Fry them up to get all the excess water out so they stiffen a little and throw your favorite sauce on and you are ready to go!  I LIVE BY THEM!  You can find them in the organic section in the cooler at most food stores.
